Raw Pasta Extravaganza With Sauce

Serves 1-2 person.

2 medium sized zucchinis
1/2  Medium onion- chopped
1 Large Portabella mushroom chopped  or 1/2  cup of Shitake chopped.
1 Cup soaked unsalted sundried tomatoes
¼ ( ½  C for runny consistency,  1/8 C for thicker)  Cup coconut water. 

Make Dressing  –(Easily used on other bases/salads etc.)

Place onion, mushroom, soaked tomatoes and coconut water in blender. Blend until smooth.

Make Zoodles(Zucchini noodles)
  • ·         Using a spiralizer, spiralize two unpeeled medium sized zucchinis. Place in appropriate sized bowl.
  • ·         Pour dressing on top, mix in well
  • ·         Allow to marinate for 45- 60 minutes refrigerated.
  • ·         Serve in two bowls & enjoy !
