Hello everyone! I hope you are having a wonderful morning, afternoon, morning. Let's be honest, the struggle is always real when trying to find solutions for the cravings of things you used to eat. I thought I would share this recipe I whipped up for my husband. He is transitioning to a vegetarian diet and still craves meat sometimes.
This recipe is also very versatile! You can put pretty much anything in it. This is because what makes Chili Mac, Chili Mac is the seasonings used in it, that seasoning is chili powder! I have a dairy intolerance so there are only a few dairy products in the recipe. You can use whatever version of an ingredient you prefer. Look below for my Chili Mac recipe!
Vegetarian Chili Mac Recipe
Yields 4 servings
- 2 cups of almond milk
-1/2 cup sharp cheddar cheese
-1/2 cup mozzarella cheese
- 1/4 teaspoon nutmeg
-Salt and Pepper to taste
~Add all ingredients to a sauce pan and stir until smooth.
- 1 box off cooked pasta
-Chili Canned Tomatoes drained (If you do not have chili tomatoes you can just a 1 teaspoon of chili powder)
- 1 package of frozen mixed vegetables cooked
- 1 package of Boca heated up
~ Fold everything together and serve!
